Potato and Corn Soup


1 Chicken breast, small dice

2 tsbp coconut or EVOO

1 onion diced

1 tsp minced garlic

2 stalks celery diced thin

2 carrots, small dice

1 tsp dried Peachy herbs

1.5 cups frozen corn or 1 can creamed corn

1.5 cups potatoes, small dice

1.5 cups whole milk or 1 can coconut milk

Water or chicken broth

Salt and pepper

Toppings: shredded cheese, chopped green onion


Heat oil in a large soup pot, add garlic and onions, cook for about 2 minutes. Add chicken, cook for 3-4 minutes.

Add carrots and celery, cook for another 2 minutes.

Add about 3 cups water ( or chicken broth) and milk.

Add potatoes, carrots and herbs, let simmer for 15-20 minutes with lid on. Add salt and pepper to taste.

Before serving sprinkle with favorite shredded cheese and top with fresh green onions.
