Lemon Chicken with Artichokes and Basil

Ingredients:
1.5 to2 lbs Boneless chicken thighs or breast, cut in bite size pieces
2 tbsp EVOO or coconut oil
1 tsp minced garlic
1 medium onion, sliced thin
Juice of 1 large lemon or 2
¼ c Ground flax
¼ c almond meal (optional)
2 tsp Peachy herbs
1 ½ c artichoke hearts, sliced (can use frozen and thawed or a 15 oz can)
Salt and pepper to taste
Directions:
Mix flax, almond meal and dried herbs in a bowl.
Add chicken to coat.
Heat oil in a large skillet, add chicken, cook until golden brown, transfer tio a bowl.
In the same skillet, add garlic and onions. (Add another tbsp oil if needed.)
Cook for about 2 minutes or until onions appear softer.
Add artichokes and lemon juice, blend well.
Add cooked chicken, sprinkle with fresh basil.
Season with salt and pepper.
