Lemon Chicken Linguine with Mushrooms

Ingredients:
1 lb chicken breast or boneless thighs
1 lb linguine, cooked (or your favorite ‘Product of Italy’ pasta)
2 tbsp EVOO
1 tsp minced garlic
1 medium onion, chopped
1 pint fresh mushrooms, washed, sliced
½ c milk (or almond milk)
Juice of 2 lemons
½ bunch fresh parsley
1 cup fresh basil, chopped
2 tsp Peachy herbs
Salt and pepper to taste
Parmesan cheese for sprinkling (optional)
Directions:
Heat 1 tbsp oil in a large skillet, add garlic and onions, cook for 2-3 minutes.
Add chicken, 1 tsp dried herbs and cook until brownish. Transfer to a bowl.
In the same skillet, add the rest of EVOO,.
Add mushrooms, cook for 2-3 minutes.
Add milk, basil, parsley, dried herbs and the rest of lemon juice.
Add cooked pasta and chicken.
Season with salt and pepper.
Sprinkle with Parmesan cheese.
Why add Mushrooms
Feel free to add or use your favorite vegetables to this dish: asparagus, sliced zucchini, sweet peppers, etc.
