4 Salmon Fillets 3-4 oz per serving
Juice of 1 lemon or 2 lines plus rind
1/3 cup ground flax seeds (almond flour is a good substitute)
1 tsp Peachy herbs
1/3 cup honey
EVOO or coconut oil
Salt and pepper to taste
Rinse and pat dry salmon fillets.
In a shallow bowl, combine dried herbs, flax seeds, lemon rind, salt and pepper.
Add lemon juice on to fillets.
Heat oils in a skillet up to 350/375 degrees.
Coat each fillet with herb-flax blend.
Place fillets in heated pan, cook 4-5 minutes (or your preference).
Turn cooked side up, drizzle with honey.
Do the same for the other side.
Serve on top of fresh mixed greens or with cooked mushroom-quinoa, cauliflower fried rice, roasted vegetables and potatoes, etc.
