Orange Chicken with Broccoli


Ingredients

1 whole chicken breast, cut up in bite size pieces

1 bunch broccoli, chopped w stems included

4 tbsp coconut oil or EVOO

2 tbsp ground flax

1 tbsp Peachy herbs

Juice of 1 large orange and zest

1 tsp garlic, minced

1 tsp ginger minced

1 medium onion, diced

1 tbsp cider vinegar

1 tbsp brown sugar, maple syrup or honey

2 tbsp soy sauce or oyster sauce

1 tsp sesame oil

2 tsp cornstarch or tapioca flour (for thickening)

Ground hot pepper blend (optional)


Directions

Sprinkle about 1 tsp soy sauce on chicken pieces.

Mix flax and Peachy herbs in a bowl, dredge chicken pieces in it.

Heat 2-3 tbsp coconut oil in a large skillet.

Add chicken, cook until brown about 4-5 minutes, transfer to a bowl.

In same skillet, heat 1 tbsp coconut oil.

Add garlic, onions and ginger cook for 2-3 minutes.

Add soy sauce, orange juice, cider vinegar, brown sugar, blend well.

Add broccoli, cook for 2-3 minutes.

Add cornstarch, stir to thicken.

Add cooked chicke.

Sprinkle with green onions and orange zest before serving.
