Ingredients
1 lb chicken breast or thighs, cut up in bite size pieces (or use ground chicken)
2 tbsp coconut oil
1 medium onion, sliced
2 tsp garlic, minced (about 6 cloves)
¼ cup lemon grass, chopped
2 tsp dried Peachy herbs
Jiuce of 1 lime (and extra lime wedges for serving)
1 tsp Chines 5 spice
1 tbsp honey (or brown sugar)
¼ c fresh mint, chopped (or basil or cilantro)
Hot chili peppers (optional)
1 tbsp fish sauce (may subst with soy sauce)
Vegetable options: cauliflower, broccoli, sweet bell peppers, bok choy, green beans, zucchini
Directions
Heat 1 tbsp oil in a large skillet, add garlic and lemon grass, cook for a minute or 2 then add the
chicken, cook until brownish, transfer to a bowl set aside.
In same skillet, heat 1 tbsp oil, add onions, and vegetables, cook for 3-4 minutes.
Add lime, fish sauce, Chinese 5 spice, honey, dried herbs.
Stir in cooked chicken.
Sprinkle with fresh mint or basil before serving.
