Korean Chap Chae (Korean sweet potato noodles with veggies)

Ingredients


1 package sweet potato noodles, soaked in water

1 large onion, sliced

1 tsp minced garlic

1 tsp chopped lemon grass

2 tbsp coconut oil

1 tsp sesame oil

2 tbsp soy sauce

1 tbsp maple syrup (or honey, brown sugar, marmalade, etc)

Sriracha sauce (optional)

2 carrots, sliced

2 celery stalks, sliced

½ cup chopped green onions to garnish

            Other vegetables in season: bok choy, shredded cabbage, broccoli, peas shoots, pea pods, asparagus, sweet peppers, etc.


Directions


Heat coconut oil in a large skillet.

Add onions, garlic and lemon grass, saute for 2-3 minutes.

Add carrots and celery, saute for 2 minutes.

Add sweet potato noodles, soy sauce, maple syrup, Peachy herbs and sesame oil.

Add ½ cup to 1 cup water.  

Cook for about 4-5 minutes with lid on.

Add the vegetables of your choice, cook for another 4-5 minutes, blending/mixing ingredients every now and then.
