Bok-Choy and Tofu Soup

Ingredients:

1 lb chicken thighs, cut is bite size strips

1 pack fresh baby bok-choy

1 pack organic firm tofu

1 cup fresh mushrooms

1 cup coconut milk

Juice of 4 limes

2 stalks lemon grass, mashed or chopped

½ cup fresh cilantro

2 tbsp ginger, minced

1 medium onion, sliced thin

2 tsp garlic, minced

1 tsp Peachy herbs

1 tbsp brown sugar

2 tbsp coconut oil or EVOO

1 tsp sesame oil

1 tbsp fish sauce (or to taste)

4-5 cups water


Directions:

Heat coconut oil in a soup pot.

Add garlic, onions, ginger, lemon grass and a hint sesame oil.

Add chicken (or any meat), cook for 3-4 minutes.

Add water, coconut milk, mushrooms, Peachy herbs and brown sugar and fish sauce, let simmer for 10-12  minutes.

Add lime juice, tofu and baby bok-choy.

Before serving, sprinkle with chopped cilantro.
