Ingredients:
1 lb ground meat (chicken, turkey or beef)
1 box lasagna noodles, boiled (or no-boil variety)
2 tbsp coconut oi ot EVOO
2 tsp minced garlic
1 medium onion, chopped
2 medium carrots, chopped
2 celery stalks , chopped
1 15 oz can crushed tomatoes
1 15 oz can tomato sauce
1 tbsp Peachy herbs
2 tbsp basil pesto (or ½ cup fresch basil, minced)
½ cup milk or coconut milk
2 cups fresh baby spinach (or 1 cup frozen)
1 cup diced sweet peppers (optional)
1 ½ cup Ricotta cheese
1 ½ cup mozzarella cheese
Salt and pepper to taste
Directions:
Heat oil in a large pot, add garlic, and onions, cook for 2 minutes.
Add ground meat, cook for 3-5 minutes.
Add carrots and celery, cook for another 2-3 minutes.
Stir in herbs, pesto, tomato sauce, crushed tomatoes and milk.
Add spinach and sweet peppers, cook for 10-12 minutes.
Spray glass pan with EVOO or avocado oil.
Lay noodles to cover pan, spread sauce over noodles, add ricotta and mozzarella cheese on top. Repeat the process up to 3 layers.
Bake in 350 degree oven for 30-32 minutes
