Chicken Shawarma


1 1⁄2 to 2 lb boneless chicken thighs

2 tbsp EVOO

Juice of 2-3 lemons (use lemon skin w zester) 1 tsp coriander

1 tsp cumin

1 tsp Peachy herbs

1⁄2 tsp paprika

1⁄2 tsp hot pepper sprinkler

Salt and pepper to taste


Miix all ingredients and add to chicken in a medium bowl.

Let sit or marinate while prepping other dishes (about 20-30 minutes).

Cook chicken on hot grilling pan on stove top until brown (this is the easier cooking method for 2-4 persons) about 5-7 minutes each side depending on thickness. Another cooking option: cook on outdoor gril, which I do with a larger group.

Serves 3-4

I typically serve this dish with a fresh slices of onions, lettuce, ripe tomatoes and flat bread; often with accompanying yogurt sauce, hummus or babaganoush.
