Bourbon Chicken w Cashews and Mushrooms

Ingredients:

2 lbs boneless chicken breast or thighs, cubed

1 onion, diced

½ cup cashew nuts

1 tsp Peachy’s dried mixed herbs

4 cloves garlic, minced

¼ cup chopped parsley

1 cup mushrooms, sliced

½ cup chopped green onions

1 tbsp cider vinegar

2 tbsp EVOO or coconut oil

1 tsp maple syrup or honey

1 tbsp soy sauce

1 cup diced water chestnuts

½ tsp Chinese 5 Spice

2 tbsp bourbon (optional)

(Can also use diced parsnips, kohlrabi or jicama as substitute for water chestnuts)


Directions:

In a large skillet, heat oil. Add chicken and cook until brownish.

Add garlic and onions and sauté for another minute.

Add bourbon, soy sauce and vinegar and simmer for about 4 minutes.

Add mushrooms, maple syrup, dried herbs, Chinese 5 spice, salt and pepper.

Sauté 3 – 4 minutes.

Add cashews, water chestnuts and sprinkle with green onions.

Serve hot over black/red/brown rice.
