Lemon-Garlic Kale and Bean Salad


1 bunch kale

1⁄2 bunch fresh flat leaf parsley, chopped

1 15 oz can cannellini beans, drained

4-5 small sweet peppers, chopped ( comes in orange, red and yellow) 1⁄4 cup tahini paste (available in jars, peanut butter section at Kroger) Juice of 1 lemon

1 tsp garlic, minced

1 tsp dried Peachy herbs

1⁄4 c water

Salt and pepper to taste


Make tahini sauce: In a bowl add water, lemon juice, herbs, salt and pepper to tahini paste Toss parsley, kale and white beans, sweet peppers in a salad bowl.

Add tahini sauce, toss.
