RECIPE OF THE MONTH

Peachy's Moo Shu Chicken
1 lb chicken breast, cut into strips
1 cup shitake mushrooms, sliced (or button mushrooms)
3 cups shredded cabbage
1 cup broccoli slaw
1 large onion, slice
1 tbsp grated or chopped ginger
3 cloves garlic, chopped
1 bunch green onions
2 eggs, scrambled
2 tbsp olive oil
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp hoi sin sauce or plum sauce
1 tsp sesame oil
8 flour tortillas
Heat 2 tsp oil in a skillet. Add eggs, cook for 2-3 minutes, set
aside.
In same skillet add the rest of oil, add chicken, add 1 tsp soy
sauce, cook for 3-4 minutes.
Add onions, garlic and ginger, sauté for 1 minute.
Add mushrooms, cabbage and broccoli slaw.
Add the rest of soy sauce, hoisin and oyster sauce.
Stir and cook until cabbage is wilted, about 4 minutes (Vegetables
will sweat liquid).
Add whole wheat flour to thicken, cook for 1 minutes.
Return eggs to chicken-vegetable mix, toss and top with green
onions.
Serve on flour tortillas (spread ½ tsp hoisin sauce on tortillas)
making sure the bottom is folded, then rolled.
